In a large bowl, combine Mayo, Pickles, Capers, Parsley, Lemon Zest, Lemon Juice, and Fresh Cracked Pepper. Cover and refrigerate until ready to use.
Batter
In a large bowl, combine flour, cornstarch, baking powder, and seasoning. Gradually whisk in beer until fully incorporated. Refrigerate until ready to use.
Fish
Slice Cod Filets into around 1-1.5 inch strips. Pat them dry and season with salt and pepper. Keep refrigerated until ready to use.
Fry 'em up!
Heat fryer oil in a large based pot, or deep fryer to 375 degrees F.
Dip fish pieces into batter, completely coating each piece of fish.
Pull fish out of batter, allowing a little of the excess batter to drip off. But you want a good amount of batter on the fish.
Carefully lower fish into the oil, dropping it away from you, one piece at a time. Fry in batches, don't overcrowd!
Fry for 3-5 minutes.
Remove fish from fryer, and place on cooling rack.
Serve immediately with Tartar Sauce on the Side!
Chips (Fries)
While you have hot oil ready, cook a frozen bag of fries! Sure you can make your own, but this is the easiest method. Be sure to season the fries hot from the oil with your choice of seasoning.
