Ingredients
Instructions
Prepare The Pork
- Pat the pork dry and rub it with Freelance Spice Rub (or your favorite BBQ Spice Rub.) Let it sit for 10-15 minutes to absorb the flavors, or even marinate overnight in the fridge for added depth of flavor.
Sear Pork for added Flavor (Optional)
- Heat Olive Oil in heavy duty pan or cast iron, over medium-high heat.
- Sear the seasoned pork on all sides until golden brown (2-3 minutes per side). This step adds depth to the flavor but can be skipped if you’re short on time.
Layer the Ingredients
- Place the sliced onions and garlic in the bottom of the slow cooker. Lay the pork on top. Pour in the Dr. Pepper and apple cider vinegar around the pork, not directly over it (to keep the rub intact).
Cook!
- Cover and cook:
- On "Low" for 8-10 hours, or "High" for 4-6 hours.
- The pork is ready when it’s tender and easily pulls apart with a fork.
Shred the Pork
- Transfer the pork to a large bowl or cutting board and shred it with two forks. Discard any large pieces of fat.
Add the BBQ Sauce:
- Drain most of the liquid from the slow cooker, leaving about 3/4 cup to keep the meat moist. Return the shredded pork to the slow cooker and stir in 1 cup of Freelance Foods Padre Pepper BBQ Sauce. Let it warm for 10-15 minutes on low.
Serve!
- Serve on buns with choice of toppings (Prepared Coleslaw, Pickles, Onions, Jalapenos, etc.). Don’t forget an extra drizzle of Freelance Padre Pepper BBQ Sauce for that finishing touch!
