SHRIMP AND PORK FRIED RICE VIDEO!

I LOVE FRIED RICE! It’s always a part of my takeout order. But sometimes it’s a letdown. So now I make my own. It’s cheaper, and it tastes way better!

Fried Rice is a pretty simple dish. The key is using high quality ingredients! Don’t skimp and buy dollar store soy sauce!

3 Cups Day Old Rice (Or 3 Par Cooked Rice Packages)
1 lb Large Shrimp, Peeled & Deveined
1 lb Pork Tenderloin
2 Tbsp. Fresh Ginger, Chopped
3 Tbsp Fresh Garlic, Chopped
¼ Cup Green Onions, sliced (+ more for garnish)
1 Tbsp. Crushed Red Pepper
3 Eggs
1 Tbsp. Dark Soy Sauce
1 Tbsp. Light Soy Sauce
2 tsp. Sesame Oil
1 Tbsp Oyster Sauce
Spicy Chili Crisps For Topping

PREPPIN'

Trim pork tenderloin and cut into bite size pieces. Season with Freelance Spice rub, or your choice of seasoning.
Peel & Devein the shrimp, season with same rub.
Chop Garlic, Ginger, & Scallions.
RICE- If using par cooked rice packages (my method in the cooking video): Remove the rice from their packaging, and crumble into a large boil. Try to break up into individual pieces. Apply a light layer of cooking oil to the rice to help prevent clumping. If using 1-2 day old rice, just take out of the refrigerator, drizzle with a little oil and break up clumps, if there are any.

COOKIN'

Heat a large skillet or wok over medium heat and add one tablespoon of oil (any high heat oil, like vegetable, canola, etc.)
Add the Garlic, Ginger, Scallions, and crushed red pepper. Cook for 1-2 minutes or until very fragrant and slightly softened.
Transfer garlic mixture to a small bowl and set aside for later.
Using a paper towel, wipe out the pan.
Return pan to burner, and turn up to medium-high. Add another 1-2 Tbsp. of Oil to the pan.
Add seasoned pork to hot oil. Don't overcrowd your pan. Cook in batches if necessary. Do not completely. Leave a little pink in the pork. We'll be putting it back on the heat again shortly!
Transfer cooked Pork to a medium bowl and set aside.
Again, oil your pan, return to medium-high heat.
Once your oil is heated, cook your shrimp in batches. Don't overcrowd the pan!
Cook your shrimp 1-2 minutes per side or until the shrimp is opaque (can't see through it no more). No add them to your bowl of cooked pork.
Wipe your pan clean with a paper towel and return to heat.
Lightly beat 3 eggs (use more or less if you want- this is your creation!)
Drizzle a little oil into the pan, and add eggs. Season with salt. Continue to cook just until the eggs are no longer runny. Transfer cooked eggs to our garlic mixture bowl.
Again, wipe out pan and return to heat with 2 Tbsp. of oil.
When your oil is hot, add your rice. Start cooking rice. If it's looking dry and/or sticking to the pan, add more oil!
Cook rice until heated through and tender (NOT MUSHY).
Add your egg and garlic mixture to the rice. Stir to combine.
Drizzle your rice mixture with Dark Soy Sauce, Light Soy Sauce, & Sesame Oil. Stir to combine. (Please use high quality sauces. This is where most of the flavor will come from!) Click each ingredient above to see what I use.
Continue to cook for another minute or so.
TASTE TASTE - Give the rice a taste. Add more sauce if desired.
Add in your cooked shrimp and pork and any juices from the bowl.
Combine everything, but don't mix too much or things will get gummy.
Drizzle everything with oyster sauce and give it one last stir.

PLATING

Scoop a giant helping of rice onto a plate. Drizzle with Spicy Chili Crisps & Green Onions. You can even drizzle with extra Oyster Sauce if desired.
